Perfect condiment for anything from French fries to fish, hot dogs and burgers and of course smørrebrød.
Ingredients Steps
  • 1 cup of homemade or good mayonnaise
  • 1/4 cup (3 small) sweet gherkins, grated.
  • 1/4 cup finely grated of shredded cabbage.
  • 1/4 cup red onion
  • 2 tsp sugar
  • 2-3 tsp Gulden''s Spicy Brown Mustard
  • 1/2 tsp Fresh tarragon leaves, chopped finely
  • Optional: Heavy cream
  • European/English cucumbers (the long thin kind)
  • Sugar
  • Vinegar
  • (Pickling) Salt (Non-iodized) (can use regular KOSHER!!!)
01. Use a Micro plane or fine grater to process the gherkin and cabbage.
02. Chop the onions and tarragon leaves together.
03. Mix the mayo with the sugar and mustard. Add the grated gherkins, cabbage, onion and tarragon to the mayo.
04. Mix together, and leave in the fridge for at least an hour for the flavors to meld.
05. Taste and add more sugar or mustard for your taste.
06. If it is too thick, add heavy cream.
