Remoulade

Perfect condiment for anything from French fries to fish, hot dogs and burgers and of course smørrebrød.

Yields: ~2 cups

Ingredients

  • 01.

    Use a Micro plane or fine grater to process the gherkin and cabbage.

  • 02.

    Chop the onions and tarragon leaves together.

  • 03.

    Mix the mayo with the sugar and mustard. Add the grated gherkins, cabbage, onion and tarragon to the mayo.

  • 04.

    Mix together, and leave in the fridge for at least an hour for the flavors to meld.

  • 05.

    Taste and add more sugar or mustard for your taste.

  • 06.

    If it is too thick, add heavy cream.
